Pickled Red Onions are probably one of the most used vegetables in my kitchen to enhance the flavor of some of my favorite dishes. Our household enjoys putting pickled red onions on salads, tacos, sandwiches, salmon lox and more! All you need is a handful of ingredients that you probably already have in your kitchen and no more than 10 minutes of time to prep these bright flavorful goodies!
Pickled red onions can be easily made by combining just five simple ingredients: Salt, sugar, apple cider vinegar, red onions, and warm water. I recommend storing pickled red onions in a clean air tight container, such as a mason jar. The one I use in this recipe can be found here on Amazon. Depending on the size of your onion, I would estimate that 1/2 a large red onion will fit into a 16 oz mason jar. By using an airtight mason jar, you can safely store these in your refrigerator for up to 3 weeks.
To prep, I suggest thinly slicing the onions for this recipe. You can do so my using a mandoline. If you wish to cut these by hand, I achieve the “half-moon” shape by removing the outside shell, cutting the onion down the middle; tip to tip, placing the flat part down on the cutting board and thinly slicing against the grain until you reach the root. I find that keeping the root on will help keep the onion in tack as you slice. Now that we know what ingredients are needed and how to slice our onion, let’s hop right into our recipe!

Pickled Red Onions Recipe

Ingredients
- 1/2 Red Onion sliced
- 1 cup Filtered Warm Water
- 1/2 cup Apple Cider Vinegar
- 1 tbsp Granulated Sugar
- 1.5 tsp Iodized Salt
Instructions
- Take 1 red onion, cut it in half and then into then slices. Set onion slices aside. In the microwave, heat up 1 cup of filtered water in a liquid measuring cup (around 60 – 90 seconds). Remove liquid measuring cup from microwave, pour in salt and sugar, stir and dissolve.
- To the sugar and salt liquid brine mixture pour in 1/2 cup of apple cider vinegar. Stir until combined.
- Take a clean 17 oz mason jar, place sliced onions inside of the mason jar, pour in ACV brine mixture into the mason jar. Seal with lid, and allow this to rest in refrigerator for at least 2 hours. Enjoy!
