In this recipe, I will share tips on how to easily marinate, season and cook a delicious rack of lamb! Lamb racks can be intimidating for some cooks, especially when they are sautéd over the stovetop (similar to my recipe found here). Lamb racks can also be a bit more expensive since the “eye” of the meat joint is very tender. However, this air fryer lamb recipe will turn you into a professional chef in under one hour!
Cooking lamb chops or lamb racks in the air fryer should literally be considered a chef cheat code! By taking a little bit of time to marinate racks of lamb, you can cook and serve some of the most flavorful and succulent cuts of meat. Before we jump into the recipe, let’s review a few tips for selecting the best lamb cuts while shopping.
Shopping for Lamb Racks
As mentioned in my previous article, lamb is a rich source of protein, and includes other health benefits such as iron, zinc, and fights against anemia. To fully benefit from all of the nutrients of eating lamb, it’s important to know how to navigate your local butcher or grocery store to identify a great cut of meat.
- Look for grass-fed lamb if possible. Grass fed lamb is rich in omega-3 fats, which reduces inflammation in the body, and promotes a healthy heart. When lambs are 100% grass fed instead of grain fed, they tend to have a higher amount of protein and less fat.
- Avoid lamb racks that are discolored such as gray, yellow, or excessively bloody. Look for cuts that are pink in and rich in color, covered in firm creamy fat.
- Save time by purchasing a french-styled lamb rack, which simply means the fat is removed and the rib bones are exposed. Some grocery stores or butchers will even french lamb ribs for you upon request.

Easy Air Fryer Lamb Recipe:
In the recipe below, I recommend using fresh ingredients where possible. This meal can be prepared in 30 minutes or less, but I also included additional steps for a meat brine, which will open up the pores of your meat for more flavor and remove the game taste that typically comes with lamb. I also recommend allowing your lamb to rest at room temperature with the marinade for 1 hour if time allows. If not, feel free to skip the brine and 1 hour marinade rest steps in my recipe below.
Air Fryer Rosemary Garlic Rack of Lamb
Ingredients
- 2 racks of lamb French style recommended
- 6 cloves garlic minced
- 2 tbsp fresh rosemary chopped
- 4 tbsp light olive oil
- salt
- pepper
Instructions
Brine Lamb Chops
- Take a bowl and fill it with water (about 4 cups or so)
- Add coarse salt to the water (about 1/4 – 1/3 cup)
- Place lamb chop loins into water brine solution and allow these to sit for 30 minutes. This will open up the pores of your meat for added flavor. Making a brine for your lamb before cooking will also remove some of the blood from the meat and the gamey smell/taste.
- After 30 minutes, remove your lamb chops from the brine solution and safely discard the water mixture. You are now ready to season and cook your lamb!
Marinade & Seasoning
- Salt and Pepper your lamb chop loins to your preference
- Mince garlic, and chop your fresh rosemary leaves
- Take a mortar and pestle or a bowl and spoon and combine: 6 cloves of garlic (I calculate one garlic clove per chop), 2 tbsp of fresh rosemary, and 3 tbsp of light olive oil. If you have a mortar, you can release the flavors of these ingredients by grinding them together, or you can simply mix this marinade together by using a bowl and a spoon. Spread this marinade mixture on both sides of your lamb, and allow it to rest at room temperature for 1 hour.
Air Fryer Rack of Lamb
- Take marinaded lamb rack and place inside of the air fryer basket and cook for 8-10 minutes on 400 F (204 C), flipping halfway.
Rosemary and garlic are such a classic combination of this kind of recipe. I love the beautiful finish you got using the air fryer, as well. I can’t wait to make this one!

Love this recipe. It motivate me to invest in an air fryer. One quick suggestion you may cry adding a paste of deep fried onions to the marinade. It combines very well with garlic.
