Take a small bowl and add 1/4 cup of olive oil, 1/2 tsp of dijon mustard, 1/2 tsp of honey, 1 tbsp on balsamic vinegar, and the juice of 1/2 a lemon.
Mince and add 2 cloves of garlic.
Sprinkle in salt and pepper to taste. Whisk ingredients together & set aside.
Broccolini Blanching Directions:
Boil 10 Cups of water, add salt.
As your water is coming to a boil, wash your broccolini, and cut the bottom stem portion off. Discard.
Once water comes to a boil, immerse broccolini in the boiling water for 2 minutes to blanch.
After 2 minutes, place the florets in an ice water bath to stop the cooking process. Once the broccolini has cooled, remove from bath and place in a bowl.
Pour dressing mixture over broccolini, add salt & pepper to taste, toss, and top off with the juice of 1/2 a lemon. Serve and enjoy!
