Easy Lemon Broccolini Recipe!

Ingredients
  

  • 10 cups Water
  • 3 bunches Broccolini 
  • 1 Lemon
  • 2 cloves Garlic, minced
  • 1/4 cup Olive Oil
  • 1/2 tsp Dijon Mustard
  • 1/4 tsp Honey (optional if you're vegan or Whole30)
  • 1 tbsp Balsamic Vinegar
  • Sea Salt to taste
  • Fresh Ground Pepper to taste

Instructions
 

Dressing for Broccolini:

  • Take a small bowl and add 1/4 cup of olive oil, 1/2 tsp of dijon mustard, 1/2 tsp of honey, 1 tbsp on balsamic vinegar, and the juice of 1/2 a lemon.
  • Mince and add 2 cloves of garlic.
  • Sprinkle in salt and pepper to taste. Whisk ingredients together & set aside.

Broccolini Blanching Directions:

  • Boil 10 Cups of water, add salt.
  • As your water is coming to a boil, wash your broccolini, and cut the bottom stem portion off. Discard.
  • Once water comes to a boil, immerse broccolini in the boiling water for 2 minutes to blanch.
  • After 2 minutes, place the florets in an ice water bath to stop the cooking process. Once the broccolini has cooled, remove from bath and place in a bowl.
  • Pour dressing mixture over broccolini, add salt & pepper to taste, toss, and top off with the juice of 1/2 a lemon. Serve and enjoy!
