Greek Salad is one of my favorite all-time meals! With summer just around the corner, and with many of us looking for yummy meals to help us lose a few pounds, I recommend trying my rendition of a greek salad. Sometimes I enjoy taking this salad to work, however the bold flavors of the traditional greek salad may be too strong for the office. 🙂 So I removed red onion from the ingredients, and replaced it with a yellow bell pepper to still give this salad a kick! Feel free to include red onion on your own if you’d like! Enjoy!
Easy & Work Friendly Greek Salad Recipe!
Ingredients
Salad Dressing Vinaigrette
- 1/2 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 1 tsp Dijon Mustard
- 3 cloves Garlic, minced
- 1 tsp Kosher Salt
- 1/2 tsp Ground Black Pepper
Salad
- 2 Hothouse cucumbers, unpeeled. Remove seeds with a spoon in the center. Cut ¼ inch thick
- 1 pint Cherry Tomatoes. Cut in half
- 1 Yellow Bell Pepper.
- 1 cup Kalamata Olives
- 1/2 cup Feta Cheese
Instructions
- To create the vinaigrette, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, kosher salt, and round pepper. Set aside.
- For the salad, take a large bowl and combine chopped hothouse cucumbers, chopped cherry tomatoes, chopped yellow bell pepper, and chopped kalamata olives. Toss salad mixture. Next pour feta cheese on top, and finish off by drizzling your homemade vinaigrette on top. Toss one more time and serve.
