In my previous travel article, I shared tips about our amazing stay in Costa Rica! One evening, our group decided to have some authentic local food by an amazing private chef named Daniel Araujo! Daniel’s company is named HYP Company. The food was very good, and my favorite dish from our dinner was the Avocado Salad!!
I loved his avocado salad so much that I messaged Daniel on Instagram to beg for the recipe! He was gracious enough to share this amazing recipe with me below! In speaking with Daniel, he said the recipe below is very simple, simple and can be accompanied with roasted chicken, fish in general or a good Ribeye steak.
Chef’s tip: Allow red onions to soak in apple cider vinegar mixture before creating salad and always use fresh ingredients!
Chef Daniel’s avocado salad recipe is also very simple and easy recreate. It is also the perfect recipe for someone who is vegetarian, vegan, on Whole30, Keto and or any other healthy diet plan. I love how all of the ingredients are natural, and rich enough to enjoy without missing any carbs or non-healthy ingredients! When I travel around the world globally, I love learning new and unique cooking recipes and techniques from others. So I’m excited to share my new favorite salad recipe with you below:
Avocado Salad Recipe:
Avocado Salad Recipe
Ingredients
- 3 Hass Avocado medium ripeness
- 1/2 Red Onion julienne cut
- 1 cup Cherry Tomatoes diced (about 12 cherry tomatoes)
- 2 tbsp Apple Cider Vinegar
- 1.5 tbsp Extra Virgin Olive Oil
- 1.5 tbsp Balsamic Vinegar from Modena is chef's preference
- 2-3 Limes
- Salt & Pepper to taste himalayan salt is chef's preference
Instructions
- Thinly slice or julienne 1/2 red onion and soak slices for 30 minutes in water with salt and 2 tbsp apple cider vinegar. This will cause the onion to expel all the acid.
- Take 3 avocados and dice them into medium cubes. Chef Daniel recommends Hass avocado with a medium ripening level. This will prevent the avocado from turning into guacamole upon mixing. Set diced avocados aside. Take around 12 cherry tomatoes, dice these and set aside.
- After onions have soaked for 30 minutes, drain water from the onion. Take a large mixing bowl and combine diced avocados, diced cherry tomatoes, and sliced red onions. To these ingredients add 1.5 tbsp Olive Oil (the extra virgin olive oil will absorb the flavor and not oxidize.), 1.5 tbsp Balsamic Vinegar, and the juice of 2-3 limes. Add salt and pepper to taste. Mix ingredients together delicately. I recommend allowing the salad to chill and rest for 4 hours before serving. This allows flavors to truly melt together. Enjoy!
