What Are Mini Baked Brie Bites
Mini Baked Brie Bites are an easy 3-ingredient appetizer made by pairing creamy brie cheese with complementary toppings such as sweet jam, nuts, or honey, all nestled in a crispy phyllo pastry shell. Some recipes use puff pastry shells, but I find these to be a bit heavy for an appetizer. If you enjoy serving light, small, enjoyable appetizers that will not make guests too full, I recommend serving this recipe in phyllo shells instead. These little treats are perfect for parties, a special occasion, or a last minute appetizer that needs to be served at a moment’s notice.
Essential Ingredients for Mini Baked Brie Bites
To make approximately 15 mini bites:
- 1 package of pre-made phyllo shells (15 shells)
- 4 oz of brie cheese, cut into small cubes
- 1/4 cup of spicy pepper jelly, or flavored jam / preserves (peach, cranberry, raspberry, apple butter, red pepper jelly, apricot, sweet fig jam all taste amazing)
- Optional toppings:
- Chopped pecans or walnuts
- Sprig of Rosemary (my favorite!)
- Honey drizzle, hot honey, or brown sugar
How to Assemble Mini Baked Brie Bites
- Preheat Your Oven: Set your oven to 350°F (175°C).
- Gather Ingredients: You’ll need pre-made phyllo shells, brie cheese at room temperature, jelly/jam, and a few sprigs of a fresh herb. Soft cheeses work best for these easy bites.
- Assemble: Arrange the pre-made phyllo shells on a parchment paper lined baking sheet. You will not need to grease the pan since you’re using parchment paper.
- Add Brie: Cut the brie cheese into small cubes, about 1/2 inch in size. Place each cube of cheese inside of a phyllo shell.
- Top with Jelly / Jam: Add about 1/2 teaspoon of your favorite jam on top of the brie in each shell. For my recipe, I used a peach pepper jelly. Take care to not overfill each shell with jelly.
- Bake: Place the baking sheet in the oven and bake for 5-7 minutes, or until you have melty brie cheese and the shells are golden brown. Allowing brie cheese to soften at room temperature before assembling will allow for faster baking times. Life Hack: You can also bake these in an air fryer.
- Garnish & Serve: Remove the baked mini brie bites from the oven and allow them to cool slightly before serving. These bites are best enjoyed warm. Garnish with fresh rosemary sprigs and enjoy!
Tips for Making Easy Brie Bites
- Use Pre-Made Phyllo Shells: I am all about making everything from scratch, but this is one ingredient that is worth buying from the grocery store. They taste great and will save you so much time!
- Softened Brie: Allowing brie to come to room temperature will make them easier to cut and result in faster baking.
- Bake as the Last Appetizer: These appetizers can be pre-made without baking a day ahead of time. Simply assemble, store them in an airtight container or with plastic wrap in the fridge, and bake for 5-7 minutes just before guests arrive. These mini appetizers also taste great the next day after an event.

Ingredients
- 1 package Pre-made phyllo shells
- 4 oz Brie cheese
- 1/4 cup Jelly or Jam of your choice (peach, cranberry, raspberry, apple butter, red pepper jelly, apricot, sweet fig jam all taste amazing)

Instructions
