This lavender simple syrup is a light, floral infusion of culinary lavender flowers, blueberries for color, sugar, and water. This syrup infuses so many recipes with a fragrant and subtle floral sweetness.
In a small saucepan over medium to low heat, combine water and sugar. Stir to mix until sugar is dissolved. Do not allow mixture to boil.
Once sugar dissolves, add 2 tbsp of dried culinary grade lavender and 5-7 blueberries to naturally color syrup without an artificial food dye. (blueberries are optional). Note: Addition of blueberries will not alter the flavor of the lavender syrup. Allow lavender and blueberries to simmer with syrup for 5 minutes.
After 5 minutes, turn off heat. Allow lavender and blueberries to steep for 20 minutes (or until the desired flavor is achieved). Stir occasionally. Strain the syrup through a fine mesh sieve or cheesecloth to remove the lavender flowers / blueberries. Transfer to a clean airtight container once cooled. Store in the refrigerator and enjoy in your favorite recipes!
