This elegant syrup is commonly used in coffee drinks, cocktails, mocktails, teas, lemonades, and desserts to add a soft floral touch that feels both cozy and elevated. When properly balanced, lavender simple syrup has a delicate herbal flavor that enhances drinks and recipes without becoming overpowering or overly perfumed.

To make this recipe, you will need simple ingredients and tools. Before cooking, you will need:

  • Granulated or organic cane sugar,
  • Dried lavender buds (culinary grade)
  • Water
  • Blueberries (optional for natural food coloring)

Not all lavender can be used in cooking. When it comes to cooking with lavender, it’s important to use culinary lavender, which is sustainably grown with food safety in mind. If you do not cook with culinary lavender, you might encounter digestive issues, unpleasant flavors, or experience exposure to pesticides and other harmful chemicals. 

  1. In a small saucepan, combine 1 cup water and 1 cup granulated sugar (or brown sugar) over medium heat.
  2. Stir until the sugar dissolves completely.
  3. Remove from heat and stir in the culinary lavender buds and blueberries for natural food coloring. Let these steep for 20 minutes.
  4. Strain into a glass jar or bottle and let cool. Store in the fridge.

  • Do Not Boil: Only allow this mixture to come to a simmer as outlined in the recipe below. Boiling will cause the water to evaporate too quickly, which will affect the floral notes in this recipe. 
  • Fresh vs. Dried: There are different types of lavender that can be used in this recipe. This recipe assumes dried lavender flowers are used. However, if you’re searching for fresh lavender blossoms (such as English lavender), lavender season is typically late spring to early summer. If you use buds that are fresh from a lavender plant, you can double and use 3-4 tbsp in this recipe. Fresh lavender has a higher water concentration, which dilutes the lavender’s natural essential oils.

  • Allow Lavender Syrup To Cool: Before use or storing this simple syrup in the refrigerator, allow the mixture to cool down to at least room temperature.
  • Storage: Use clean airtight glass bottles (ex: mason jar) to store this homemade simple syrup. This lavender simple syrup will last for 2-3 weeks in the refrigerator as long as it is stored properly in a sealed container. 

How can I make lavender simple syrup purple naturally?

Traditional lavender simple syrup is usually pale golden rather than bright purple. For a natural purple color, you can simmer a few blueberries into the syrup while it cooks, which adds a soft lavender-purple hue without the need for artificial food coloring.

Store lavender simple syrup in an airtight glass jar or bottle in the refrigerator once it has completely cooled. Properly stored, it will stay fresh for up to 2 weeks and is best kept away from heat and direct sunlight.

Homemade Lavender Simple Syrup Recipe

This lavender simple syrup is a light, floral infusion of culinary lavender flowers, blueberries for color, sugar, and water. This syrup infuses so many recipes with a fragrant and subtle floral sweetness.

Instructions 

  • In a small saucepan over medium to low heat, combine water and sugar. Stir to mix until sugar is dissolved. Do not allow mixture to boil.
  • Once sugar dissolves, add 2 tbsp of dried culinary grade lavender and 5-7 blueberries to naturally color syrup without an artificial food dye. (blueberries are optional). Note: Addition of blueberries will not alter the flavor of the lavender syrup. Allow lavender and blueberries to simmer with syrup for 5 minutes.
  • After 5 minutes, turn off heat. Allow lavender and blueberries to steep for 20 minutes (or until the desired flavor is achieved). Stir occasionally. Strain the syrup through a fine mesh sieve or cheesecloth to remove the lavender flowers / blueberries. Transfer to a clean airtight container once cooled. Store in the refrigerator and enjoy in your favorite recipes!
