  • 1 teaspoon onion powder – Boosts savory onion depth.
  • 1 teaspoon garlic powder – Essential for that warm, aromatic base.
  • 1 teaspoon adobo seasoning – Adds salt, garlic, and subtle spice.
  • ½ teaspoon ground sage – Brings earthy warmth that pairs beautifully with roasted chicken.
  • 1 teaspoon smoked paprika – Adds color and subtle smokiness.
  • 3 tablespoons butter, sliced – Creates richness and enhances the pan gravy.
  • Salt and Pepper to taste – In this recipe I used around 1 teaspoon salt + ½ teaspoon black pepper to enhance the overall seasoning.
  • 5 tablespoons pan drippings – The foundation of gravy that we will thicken in the recipe.
  • 1 tablespoon all-purpose flour – Thickens the drippings into a simple, savory gravy.

STEP 5: Make the Gravy – Halfway through baking, Baste the chicken with the juices. Remove about 5 tablespoons (¼ cup) of pan drippings. Whisk with 1 tablespoon flour to create a slurry. Pour slurry back over the chicken. Re-baste to spread evenly.

  • Preheat the oven to 400°F. Arrange half of the sliced onions and bell peppers in the bottom of a large baking dish.
  • Pat the chicken pieces dry and season generously on all sides with onion powder, garlic powder, adobo seasoning, smoked paprika, ground sage, salt, and black pepper. Place the seasoned chicken over the vegetables in a single layer. Pour the Italian dressing evenly over the chicken, allowing it to settle into the vegetables below. Scatter the remaining onions and peppers over the top, then distribute the sliced butter evenly across the dish.
  • Bake uncovered for about 1½ hours, basting the chicken with the pan juices halfway through cooking. At that point, carefully remove about 5 tablespoons (¼ cup) of the drippings and whisk together with 1 tablespoon flour until smooth. Spoon this mixture back over the chicken and baste again to coat.
