This Italian Dressing Chicken is a flavorful, oven-baked chicken dinner made with a zesty Italian dressing marinade, tender roasted peppers and onions, and rich buttery pan gravy. It’s an easy recipe perfect for busy weeknights, delivering juicy, golden brown chicken with maximum flavor using simple pantry ingredients.
Preheat the oven to 400°F. Arrange half of the sliced onions and bell peppers in the bottom of a large baking dish.
Pat the chicken pieces dry and season generously on all sides with onion powder, garlic powder, adobo seasoning, smoked paprika, ground sage, salt, and black pepper. Place the seasoned chicken over the vegetables in a single layer. Pour the Italian dressing evenly over the chicken, allowing it to settle into the vegetables below. Scatter the remaining onions and peppers over the top, then distribute the sliced butter evenly across the dish.
Bake uncovered for about 1½ hours, basting the chicken with the pan juices halfway through cooking. At that point, carefully remove about 5 tablespoons (¼ cup) of the drippings and whisk together with 1 tablespoon flour until smooth. Spoon this mixture back over the chicken and baste again to coat.
