It’s light enough for happy hour, chic enough for entertaining, and simple enough to recreate for your next round of cucumber cocktails.

Cucumber Spritz cocktails taste refreshing cool, and lightly floral. The muddled mint sprigs and cucumber in this recipe add a pleasant garden brightness, while the elderflower liqueur brings soft floral sweetness. The splash of lime juice I’ve included here brightens the ingredients in this cocktail, and the Prosecco finishes with lively bubbles.

  • 2 oz cucumber vodka (or regular vodka muddled with cucumber slices)
  • 1.5 oz elderflower liqueur (like St-Germain)
  • ½ oz fresh lime juice
  • 2–3 oz chilled Prosecco
  • 6 fresh mint leaves (muddle 12 times)
  • Cucumber ribbons or cucumber slices for garnish
  • Ice

STEP 1: Muddle the base – In a cocktail shaker, add 6 fresh mint leaves, 4 thin slices of cucumber, and 1.5 oz elderflower liqueur. Muddle muddle these together gently around 12 times to release the flavors.

STEP 2: Shake it up – To the cocktail shaker, add 2 oz of cucumber vodka, ½ oz of fresh lime juice, and ice. Shake for a few seconds.

STEP 3: Strain & top – Strain the mint-cucumber mixture into a champagne flute. Top with 2–3 oz of chilled Prosecco.

This cocktail is best enjoyed immediately. However, you can prep the muddled base (vodka, mint, cucumber, and elderflower) in advance and refrigerate it for up to 24 hours. When ready, shake with ice, strain, and top with Prosecco right before serving.
