FAQ
Can I make these with just egg whites?
Yes! Substitute half or all of the whole eggs with egg whites for a lighter version that’s still a great source of protein.
How do you prevent egg bites from being rubbery?
To avoid rubbery egg bites, bake them low and slow if you're not using a silicone muffin pan (around 350°F/175°C) and remove them as soon as they’re set. Overcooking eggs is what causes a rubbery texture. If you use a silicone muffin pan you can cook as instructed in this recipe. Silicone muffi pans help with even cooking and easy removal, keeping your bites soft and tender.
What cheeses work best in egg bites?
Try feta cheese for tanginess, sharp cheddar cheese for richness, or even a touch of parmesan cheese for extra flavor.
Do I need a sous vide machine to make egg cups?
Super fancy, but no you do not. This recipe skips the sous vide machine. Using a silicone muffin tray gives you a similar fluffy texture without the hassle of a water bath.
Can I add leftover meat or veggies?
Definitely. This is a great option for using leftover meat or roasted vegetables. Just be sure to remove any excess oil or moisture so there isn’t too much liquid in the muffin cups.
