This means no water bath or sous vide machine needed. Perfect for meal prep, busy weeks, or a healthy breakfast on the go! Customize with bell pepper, green onions, feta cheese, leftover meat, or sharp cheddar cheese for extra flavor.
Preheat oven to 400°F (204°C). Place bacon on a baking sheet and bake until crispy. While bacon cooks, sauté your choice of breakfast sausage in a skillet over medium heat until browned. Drain excess grease. While the meat cooks, finely chop bell pepper, onions, spinach, and any additional veggies you’d like to use.
In a large mixing bowl, whisk together eggs, cheese, seasoned salt, and black pepper. For lighter bites, substitute some egg whites.
Once proteins (bacon and or sausage are done cooking) Crumble and distribute meats and veggies evenly in a silicon muffin pan tins. Pour the egg mixture over fillings until nearly full. Place the silicone muffin pan on a baking sheet and slide onto the middle rack to bake for 20–25 minutes until the tops are firm. Avoid overbaking to keep a creamy texture.
