Quick and Easy Egg Bites Recipe

Ingredients

  • 12 eggs
  • 1/2 cup shredded cheese
  • 1 tsp seasoned salt
  • 1/2 tsp ground black pepper
  • 1 cup chopped spinach
  • 1/2 cup bell pepper diced
  • 1/2 cup onion diced
  • 1/2 lb breakfast sausage ground
  • 4 slices bacon

Instructions

  • Preheat oven to 400°F (204°C). Place bacon on a baking sheet and bake until crispy. While bacon cooks, sauté your choice of breakfast sausage in a skillet over medium heat until browned. Drain excess grease. While the meat cooks, finely chop bell pepper, onions, spinach, and any additional veggies you’d like to use.
  • In a large mixing bowl, whisk together eggs, cheese, seasoned salt, and black pepper. For lighter bites, substitute some egg whites.
  • Once proteins (bacon and or sausage are done cooking) Crumble and distribute meats and veggies evenly in a silicon muffin pan tins. Pour the egg mixture over fillings until nearly full. Place the silicone muffin pan on a baking sheet and slide onto the middle rack to bake for 20–25 minutes until the tops are firm. Avoid overbaking to keep a creamy texture.
  • Let egg bites cool for 5 minutes before removing. Enjoy warm or allow egg bites to completely cool for storage.
