As a food enthusiast who grew up cooking for my family while juggling a demanding corporate job, I value easy meals that don’t compromise on flavor or nutrition. This dish checks all the boxes: omega-3 rich wild salmon or Atlantic salmon, a sweet-and-savory teriyaki marinade, and quick cook times using a prepared baking sheet or hot pan. Plus, the leftover salmon tastes just as good the next day!

  • Type of Salmon: This recipe works well with king salmon, Atlantic salmon, or wild salmon (I try to avoid farm-raised salmon due to chemicals fed to the salmon in this process). Just keep in mind the thickness of the salmon will affect the cooking time. Thicker cuts may need a few extra minutes in the oven or air fryer.

  • Fresh vs Frozen: I’ve used both fresh and frozen salmon in the past when cooking this recipe. If you purchase fresh salmon, be sure it smells clean and does not have a fishy smell. The color should be vibrant and pink. If you opt for frozen salmon, be sure to give the salmon time to completely thaw before cooking.
  • Skin-on vs. Skin-Off: Skin-on salmon fillets are ideal when cooking on a sheet pan, in a baking dish, or in a hot pan. The skin helps lock in moisture, lessens the chances of sticking, and it also prevents the fish from falling apart during the cooking process. Think of the skin as a “protective barrier”. If your family does not like skin, simply remove it after cooking and before serving.
Seasoned Teriyaki Salmon
  1. Preheat oven to 400°F (204°C). Line a baking dish or sheet pan with foil or parchment. Lightly oil the surface.
  2. Clean and pat salmon fillets dry with a paper towel.
  3. Lightly coat each salmon fillet with truffle oil. Next sprinkle truffle salt on top of the salmon fillet and finish by pouring the Veri Veri Teriyaki Sauce all over the salmon. Allow fillets to rest for 10-15 minutes, which will give the teriyaki marinade time to penetrate the pores of the fish.
  4. To prepare for baking, place salmon skin side down in the baking dish or pan. Cover with foil.
  5. Bake on the top rack of the oven for 12–15 minutes, depending on thickness of the salmon, or until it reaches an internal temperature of 125–130°F (52–54°C). You can also use an instant-read meat thermometer for an accurate measurement. For extra caramelization, remove foil and pour additional marinade on top and broil for the last 2 minutes.
  6. Remove salmon from oven. If you enjoy a saucy salmon, pour reserved teriyaki sauce on top, garnish with sesame seeds or green onions and serve.

This teriyaki salmon recipe pairs well with the following side dishes:

  • Store leftover teriyaki salmon in an airtight container in the fridge for up to 3 days. Or place in a freezer bag and freeze for future use.
  • You can gently reheat this fish using the following options:
    • Air Fryer: 300°F (149°C) for 4–5 minutes (my favorite method great for a quick warm-up)
    • Oven: Heat using a low temperature like 275°F (135°C). Place a bit of marinade in the pan and place the salmon on top. This will keep the fish moist during the reheat process.
    • Large Frying Pan: Over low heat, covered with a lid and a tablespoon of chicken broth or sauce

That teriyaki glaze looks insanely good — glossy, sticky, just the right kind of savoury-sweet. And I love how it feels fancy but still doable on a busy night. Adding this to my “I want to impress myself” dinner list.
