Ingredients

Blueberry Mojito

  • 7 Mint Leaves
  • 2 oz Blueberry Syrup
  • 2 oz White Rum
  • 1 oz Lime Juice
  • Ice
  • Sparkling Water

Instructions

  • Wash and clean blueberries. Add 1 ½ cups blueberries, 1 cup of sugar, and 1 cup of water to a small saucepan over medium heat to make blueberry syrup. Bring to a gentle simmer, stirring until the sugar completely dissolves. Continue cooking for several minutes until the blueberries burst and release their juices.
  • Remove the saucepan from the heat and allow the syrup to cool slightly. Pour the mixture through a fine mesh strainer, pressing the blueberries with the back of a spoon to extract every bit of juice. Let the syrup cool completely.
  • Add the blueberry syrup and fresh mint leaves to a cocktail shaker. Using a cocktail muddler or the back of a wooden spoon, gently muddle the mint to release its fragrant oils without shredding the leaves. Add the white rum, fresh lime juice, and plenty of ice to the shaker.
  • Shake vigorously until the cocktail is thoroughly chilled. Fill a highball glass or Collins glass with fresh ice. Strain the cocktail over the ice and top with sparkling water or club soda. Garnish with extra blueberries and a sprig of mint before serving. Enjoy!
