To start this dish, pre-chop all of orzo pasta ingredients: 2 cups of cherry tomatoes (use heirloom cherry tomatoes if you want more color), 1 cucumber, 1/2 red onion, 3 oz of marinated artichoke hearts, 2 oz of black olives, 3/4 cup of feta cheese, and 1/4 cup of fresh parsley to garnish. Set ingredients aside.
Take a stock pot and bring water to boil. Upon boil, add 1 tbsp of lemon pepper seasoning and orzo pasta. Cook the orzo pasta according to package instructions. Drain and set aside.
To a large mixing bowl, add drained orzo pasta, chopped ingredients, the juice of one lemon, 1/3 cup of Ken's Zesty Italian Dressing, 1 tsp Herbes de Provence seasoning, and 1/2 tsp lemon pepper seasoning. Toss and combine. Add salt and pepper to taste. Garnish with fresh chopped parsley. Allow salad to rest in the refrigerator for at least one hour. (over night is even better) Serve chilled and enjoy!
