To create the vinaigrette, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, kosher salt, and round pepper. Set aside.
For the salad, take a large bowl and combine chopped hothouse cucumbers, chopped cherry tomatoes, chopped yellow bell pepper, and chopped kalamata olives. Toss salad mixture. Next pour feta cheese on top, and finish off by drizzling your homemade vinaigrette on top. Toss one more time and serve.
