Ingredients

  • 1 Small Seedless Watermelon (About 4-6 cups)
  • 3/4 cup Fresh Squeezed Lemon Juice
  • 1 cup Thyme Simple Syrup (Recipe Located Here)

Instructions

  • Cut a whole watermelon into watermelon cubes, removing any black seeds. For the lemon juice, please use fresh lemon juice by squeezing and removing all lemon seeds.
  • Place watermelon cubes in a blender or food processor. Blend on high speed until smooth, creating a watermelon puree.
  • Pour the puree through a fine mesh strainer or fine mesh sieve into a large pitcher, pressing with a large spoon to extract all the juice.
  • To the pitcher, add fresh lemon juice, thyme simple syrup. Stir until combined. Taste and adjust sweetness or tartness with more extra lemons or syrup if needed. Serve and enjoy over ice!
