Bacon balsamic roasted green beans are such a tasty and easy 30-minute side dish. They are made with fresh green beans, crispy bacon, onions, garlic, and a sweet and tangy balsamic glaze. Growing up in the South, I’m used to green beans cooked low and slow with smoked meat, but I created this recipe when I wanted those familiar savory flavors with a little more texture. Roasting the green beans at high heat gives them lightly caramelized edges, while the bacon adds smokiness and the balsamic vinegar adds the perfect sweet and tangy finish.

How to Make Oven Roasted Green Beans with Bacon
These green beans come together in just a few simple steps before roasting in the oven. Detailed notes can be found in the printable recipe card below.
- STEP 1: Preheat the Oven – Preheat your oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper or foil. Wash, trim, and dry green beans. Set aside.

- STEP 2: Sauté the Bacon – Heat 1 tablespoon of olive oil in a nonstick skillet over medium heat. Add the bacon, onion, and garlic and sauté until the bacon is almost cooked through. Remove from the heat.

- STEP 3: Season the Green Beans – Add the clean, thoroughly dried green beans to a large bowl. Toss with the remaining olive oil, salt, black pepper, red pepper flakes, onion powder, brown sugar, and granulated sugar.

- STEP 4: Add the Balsamic Mixture – Add the bacon, onion, garlic, and rendered drippings to the bowl. Drizzle with balsamic vinegar and toss until the green beans are evenly coated.

- STEP 5: Arrange the Green Beans – Spread the green bean mixture in a single layer on the prepared baking sheet, leaving enough space for the beans to roast instead of steam.

Tips for Roasted Green Beans with Bacon
- Dry Your Beans: The crispy texture achieved from roasting green beans or other vegetables is literally one of my favorite parts of this recipe. To achieve optimal texture , be sure to thoroughly dry your green beans after washing. If you try to raost green beans while leaving excess moisture, your green beans will end up steaming in the oven instead of roasting.
- Don’t Overcook: Be sure to keep an eye on your roasted green beans to prevent overcooking. Cooking times may vary slightly for this recipe depending on the size of your green beans. You want them to be tender on the outside, but not shriveled looking.
- Don’t Crowd the Pan: To achieve the best roasting results, spread your green beans out in a single layer on a large baking sheet. If you pile the green beans on top of one another over crowd the pan, your green beans will begin to steam instead of roasting.
To ensure you create the most delectable roasted green beans with bacon, take some time to apply a few of these simple roasting tips:
- Preheat Your Oven: For the best roasting results, always preheat your oven to a high temperature, and not the default 350 F. I recommend roasting your green beans between 400 F to 425 F (205 C to 220 C). The higher the heat, the green beans will extract its own natural sugars, resulting in a nice caramelization.
- Season Well: Don’t be shy with seasoning your green beans, especially when roasting. This recipe incorporates the savory flavors of minced garlic, onions, bacon, salt, pepper, brown sugar, and more! Infusing seasoning and flavor into roasted green beans are important to achieve flavor in every bite.
Roasted Green Beans Variations
- Parmesan Cheese: Sprinkle freshly grated Parmesan cheese over the green beans just before serving for a salty, nutty finish.
- Honey Balsamic: Replace the brown sugar and granulated sugar with a drizzle of honey for a naturally sweet variation.
- Spicy Green Beans: Increase the red pepper flakes or add a pinch of cayenne pepper for an extra kick of heat.
- Lemon Garlic: Add fresh lemon zest and a squeeze of lemon juice after roasting for a bright, citrusy finish.
- Bacon-Free: Omit the bacon and use additional olive oil to sauté the onions and garlic for a vegetarian-friendly version.

How to Store Roasted Green Beans
- Refrigerator: Allow leftover green beans to cool slightly before transferring them to an airtight container. Refrigerate promptly and store for up to 3-4 days.
- Reheating: For the best texture, reheat in a preheated oven at 375°F (190°C) for 5-10 minutes or until heated through. You can also reheat them in an air fryer or microwave.
- Freezing: Transfer cooled roasted green beans to a freezer-safe container or resealable freezer bag. Remove excess air and freeze for up to 2-3 months for the best quality. Frozen leftovers may take longer to reheat. Reheat to 165°F (74°C).
