While there are a few extra steps compared to simply tossing broccoli into a skillet, blanching and shocking the broccoli before sautéing completely transforms the final dish, trust me! The result is tender broccoli with golden edges, fresh flavor, and plenty of garlic in every bite.

STEP 1: Clean and Prepare the Broccoli – Begin by cleaning the broccoli thoroughly. Fill a large bowl with cold water and a generous pinch of salt. Submerge the broccoli and allow it to sit for a few minutes to loosen any dirt or debris. Rinse well, then cut the broccoli into florets. Peel the stems and slice them into thin pieces.

STEP 2: Blanch the Broccoli – Bring a large pot of salted water to a boil. Add the broccoli and blanch for about 2 minutes, just until it becomes bright green and slightly tender. Immediately transfer the broccoli to an ice bath to stop the cooking process. Once cooled, drain thoroughly and pat dry with paper towels.

Most sautéed broccoli recipes call for tossing clean broccoli straight into a pan and skipping the blanch and ice bath steps. However, Many people skip this step, but it makes a huge difference. Blanching partially cooks the broccoli while locking in its vibrant green color. The ice bath immediately stops the cooking process, preventing mushy broccoli. This technique also allows the broccoli to spend less time in the skillet, meaning it develops beautiful caramelized edges without becoming overcooked and mushy. Sautéing Tips for Perfect Broccoli

  • Dry the Broccoli Thoroughly Before Sautéing – After blanching and using the ice bath, you should always pat the broccoli completely dry with paper towels. Excess moisture creates steam, which prevents the broccoli from developing those delicious golden-brown edges.
  • Use a Large Skillet – Choose a large skillet (I recommend a stainless steel pan) or sauté pan so the broccoli has plenty of room. Overcrowding the pan traps moisture and causes the broccoli to steam instead of sauté.
  • Don’t Move It Too Soon – One of the biggest mistakes when learning how to sauté broccoli is stirring it constantly. Allow the broccoli to sit undisturbed for 2 to 3 minutes at a time so it can caramelize and develop color.
  • Add Garlic Near the End – I know this feels strange since garlic is normally sautéed at the beginning. However, since garlic cooks quickly and can become bitter if it burns. Add it during the last few minutes of cooking will render the best flavor.
  • Season After Browning Begins – Allow the broccoli to develop some color before adding seasonings. This helps the broccoli caramelize properly and prevents the spices from burning.
  • Use Fresh Broccoli – Fresh broccoli tends to sauté better than frozen broccoli because it contains less moisture and develops a better texture.
  • Finish with Acid – A squeeze of fresh lemon juice added at the end brightens the dish and balances the richness of the olive oil and butter.

This dish stores wonderfully if you have leftovers. You can store leftover sautéed broccoli in an airtight container in the refrigerator for up to 4 days. When you’re ready to reheat, I recommend reheating in a large skillet over medium heat for 2 to 3 minutes. You can also reheat in the microwave as a last resort for 30 to 60 seconds. If you wish to freeze your leftovers, you can allow the sautéed broccoli to cool completely, then transfer it to a freezer-safe container or freezer bag and freeze for up to 3 months.

Ingredients 

  • 1 Head of Broccoli, (washed and chopped)
  • 2 tbsp Olive Oil
  • 2 tbsp Unsalted Butter
  • 5 cloves Garlic, (minced)
  • 1 tsp Sazon Complete
  • 1 tbsp Lemon Juice, (freshly squeezed)
  • Salt & Pepper to taste

Instructions 

  • Bring a large pot of salted water to a boil. Meanwhile, wash the broccoli thoroughly. Cut the head into florets and peel and slice the stems.
  • Add the broccoli to the boiling water and blanch for 2 minutes, until bright green. Transfer immediately to an ice bath. Once cooled, drain well and pat dry.
  • Heat the olive oil in a large skillet over medium-high heat. Add the broccoli and spread into an even layer. Cook undisturbed for 3-4 minutes, then stir and continue cooking until lightly browned and tender.
  • Sprinkle the broccoli with the Sazón Complete and toss to coat. Cook for 1-2 minutes more. Reduce the heat to medium. Add the butter and garlic and cook, stirring frequently, until the butter has melted and the garlic is fragrant.
  • Remove from the heat. Stir in the lemon juice and season with salt and pepper to taste. Serve immediately and enjoy!

  • Texture: Dry the broccoli thoroughly after the ice bath to achieve the best caramelization.
  • Flavor: Fresh garlic provides the best flavor, but garlic paste can be substituted.
