Ingredients

  • 1 loaf Sliced White Sandwich Bread
  • 1 8oz Package Cream Cheese softened
  • ¼ cup Mayonnaise
  • 1 English Cucumber peeled and thinly sliced
  • 1 tbsp Fresh Dill chopped
  • 1 tbsp Fresh Chives chopped
  • ¼ tsp Onion Powder
  • ¼ tsp Garlic Powder
  • 1 tsp Kosher Salt divide for drying cucumbers and seasoning
  • ¼ tsp Ground Black Pepper

Instructions

  • Start by thinly slicing your cucumber into delicate rounds. Lay the slices out on paper towels and lightly sprinkle with some of the salt you've measured out. This helps draw out excess water so your sandwiches stay fresh and not soggy. Let them rest while you prepare the filling.
  • In a mixing bowl, combine the softened cream cheese, mayonnaise, onion powder, garlic powder, salt, pepper, fresh dill, and chives. Mix until smooth and creamy. This cream cheese mixture should be light, herby, and easy to spread.
  • Take your slices of white bread and trim off the crusts if you’re making cucumber finger sandwiches. Spread a generous but even layer of the cream cheese mixture over each slice of bread. Gently pat your cucumber slices dry, then layer them evenly over one side of the bread. Top with another slice of bread and press lightly.
  • Using a sharp knife or a cookie cutter, cut into small finger sandwiches, triangles, or elegant shapes. Serve and enjoy.

Notes

  • Use room temperature cream cheese for a smooth, easy-to-spread filling that won’t tear your bread.
  • Dry your cucumbers thoroughly with paper towels to remove excess water—this is key to preventing soggy cucumber sandwiches.
  • Slice cucumbers very thin for the best texture and to keep the sandwiches delicate and easy to bite.
  • If making ahead, assemble sandwiches no more than a few hours in advance and store covered in the refrigerator.
  • Keep sandwiches fresh by placing a slightly damp paper towel over them and covering with plastic wrap until ready to serve.
