There’s something incredibly elegant about a classic cucumber sandwich. After visiting London several times and experiencing traditional afternoon tea at some of the city’s most charming establishments, I fell in love with these delicate cucumber tea sandwiches. Light, refreshing, and beautifully simple, they’re the perfect balance of creamy, herby, and crisp. These sandwiches are the perfect appetizer for baby showers, bridal showers, or an afternoon tea party.

The best cucumbers for cucumber tea sandwiches are English cucumbers (and trust me, I’ve tested them all!). They have thinner skin, fewer seeds, and a mild flavor that makes them ideal for delicate finger sandwiches.

If you can’t find English cucumbers in the store, you can also use:

  • Persian cucumbers – they’re slightly smaller, very crisp, and low in seeds
  • NOTE: Avoid standard cucumbers when possible. They tend to have thicker skin and more water content, which can lead to soggy sandwiches.

The key is choosing crisp cucumbers with less excess water for the best texture.

This recipe comes together with the following ingredients:

  • Sliced white bread (soft bread works best) – Provides a light, delicate base that keeps these cucumber tea sandwiches soft and traditional. The texture is key for that classic finger sandwich feel.
  • Cream cheese, softened to room temperature – Creates a rich, creamy foundation for the spread and helps everything bind together smoothly without tearing the bread.
  • Mayonnaise – Adds extra creaminess and a subtle tang, making the filling lighter and more spreadable.
  • English cucumber, peeled and thinly sliced – The star of the recipe, bringing a crisp, refreshing bite and clean flavor that balances the richness of the spread.
  • Fresh dill, finely chopped – Adds a bright, herbaceous flavor that pairs beautifully with cucumber and elevates the overall taste.
  • Fresh chives, finely chopped – Brings a mild onion flavor that adds depth without overpowering the sandwich.
  • Onion powder – Enhances the savory flavor with a subtle, well-rounded onion note.
  • Garlic powder – Adds gentle warmth and depth to the cream cheese mixture without being too strong.
  • Kosher salt – Balances and enhances all the flavors while also helping draw out excess moisture from the cucumbers.
  • Fresh ground black pepper – Adds a light touch of spice and complexity to round out the creamy filling.

This recipe comes together in just four easy steps:

step one photo of sliced cucumbers being dried out

STEP 1: Slice and Dry Cucumbers – Start by thinly slicing your cucumber into delicate rounds. Lay the slices out on paper towels and lightly sprinkle with a pinch of salt. This helps draw out excess water so your sandwiches stay fresh and not soggy. Let them rest while you prepare the filling.

STEP 2: Make the Filling – In a mixing bowl, combine the softened cream cheese, mayonnaise, onion powder, garlic powder, salt, pepper, fresh dill, and chives. Mix until smooth and creamy. This cream cheese mixture should be light, herby, and easy to spread.

STEP 3: Prepare Sandwich Bread – Take your slices of white bread and trim off the crusts if you’re making cucumber finger sandwiches. Spread a generous but even layer of the cream cheese mixture over each slice of bread.

STEP 4: Assemble Sandwich – Gently pat your cucumber slices dry, then layer them evenly over one side of the bread. Top with another slice of bread and press lightly. Using a sharp knife or a cookie cutter, cut into small finger sandwiches, triangles, or elegant shapes. Serve and enjoy!

Tips to Prevent a Soggy Cucumber Tea Sandwich

  • Always dry your cucumber slices using paper towels
  • Lightly salt cucumbers to remove excess moisture
  • Use a thin layer of butter under the spread if making ahead (acts as a moisture barrier)
  • Stick with soft white bread, but ensure it’s fresh, not overly airy or stale
  • Assemble sandwiches close to serving time for best results

Ingredients

  • 1 loaf Sliced White Sandwich Bread
  • 1 8oz Package Cream Cheese, softened
  • ¼ cup Mayonnaise
  • 1 English Cucumber, peeled and thinly sliced
  • 1 tbsp Fresh Dill, chopped
  • 1 tbsp Fresh Chives, chopped
  • ¼ tsp Onion Powder
  • ¼ tsp Garlic Powder
  • 1 tsp Kosher Salt, divide for drying cucumbers and seasoning
  • ¼ tsp Ground Black Pepper

Instructions

  • Start by thinly slicing your cucumber into delicate rounds. Lay the slices out on paper towels and lightly sprinkle with some of the salt you've measured out. This helps draw out excess water so your sandwiches stay fresh and not soggy. Let them rest while you prepare the filling.
  • In a mixing bowl, combine the softened cream cheese, mayonnaise, onion powder, garlic powder, salt, pepper, fresh dill, and chives. Mix until smooth and creamy. This cream cheese mixture should be light, herby, and easy to spread.
  • Take your slices of white bread and trim off the crusts if you’re making cucumber finger sandwiches. Spread a generous but even layer of the cream cheese mixture over each slice of bread. Gently pat your cucumber slices dry, then layer them evenly over one side of the bread. Top with another slice of bread and press lightly.
  • Using a sharp knife or a cookie cutter, cut into small finger sandwiches, triangles, or elegant shapes. Serve and enjoy.

Notes

  • Use room temperature cream cheese for a smooth, easy-to-spread filling that won’t tear your bread.
  • Dry your cucumbers thoroughly with paper towels to remove excess water—this is key to preventing soggy cucumber sandwiches.
  • Slice cucumbers very thin for the best texture and to keep the sandwiches delicate and easy to bite.
  • If making ahead, assemble sandwiches no more than a few hours in advance and store covered in the refrigerator.
  • Keep sandwiches fresh by placing a slightly damp paper towel over them and covering with plastic wrap until ready to serve.
