After testing countless homemade salsa recipes over the years and learning how to make traditional latin salsa from my travels to Mexico, I’ve found that nothing hits quite like a fresh mango salsa recipe made with juicy mangos, crisp veggies, and a splash of tangy lime juice. This vibrant, easy mango salsa recipe has become a go-to favorite in my kitchen, especially during mango season when the fruit is extra sweet and flavorful. Whether you’re scooping it up with tortilla chips, layering it onto grilled fish, shrimp tacos, or spooning it over burrito bowls, this colorful mango salsa is the perfect combination of sweet, spicy, and refreshing.

  • Use Ripe but Firm Mangoes – Look for ripe mangoes that yield slightly to pressure but aren’t mushy. If a mango is hard when you squeeze it, that means it needs more time to ripen. Take care to not use overripe mangos. Overripe mangoes can make the salsa soggy.
  • Balance Sweet and Heat – The sweetness in this recipe pairs well with spicy peppers like jalapeño or serrano for a little heat.
  • Add a Tangy Element – Fresh lime juice (or lemon juice) helps brighten the salsa and balance the flavors. Use of limes or lemons will also help preserve the vibrant colors and freshness.
  • Soak Red Onions – In this recipe I recommend soaking slices of red onions in water for 10–15 minutes. This helps mellow their sharp bite and reduce bitterness, making them milder and more pleasant in fresh dishes like mango salsa. It also keeps their crunch while softening the flavor so they don’t overpower the other ingredients in this recipe.

  • Let It Rest Before Serving – Allow your salsa to rest for 10–15 minutes at room temperature before serving. This allows the natural flavors to meld and intensify. You can also allow it to rest in the fridge for 1-2 hours before serving. 
  • Fresh mangoes (or honey mangoes, diced) – The star of the recipe. Mangoes provide natural sweetness, a juicy texture, and tropical flavor that balances the savory and spicy ingredients.
  • Red onion, thinly sliced – Adds a sharp, savory bite that contrasts beautifully with the sweet mango. Soaking the sliced onion in water helps mellow its pungency while maintaining its crisp texture.
  • Red bell pepper, diced – Contributes crunch, color, and a subtle sweetness that complements the mango without overpowering it.
  • Jalapeño pepper (or serrano pepper for more heat)– Brings a touch of heat that balances the sweetness of the fruit. Serrano peppers provide a spicier kick for those who enjoy more heat.
  • Fresh cilantro – Adds a bright, fresh, herbaceous flavor that gives the salsa a classic restaurant-style taste. If you’re not a fan of cilantro, parsley offers freshness with a milder flavor.
  • Fresh lime juice – Provides acidity and brightness, helping to balance the sweetness of the mango while tying all of the flavors together. The acid also helps keep the fruit tasting fresh.
  • Orange juice – Adds another layer of citrus flavor and natural sweetness. It enhances the tropical notes of the mango and softens the tartness of the lime juice.
  • Salt and pepper to taste
  • Optional add-ins: cherry tomatoes, green onions, ripe peach, pomegranate seeds, or black beans for extra texture

This recipe comes together in four easy steps:

STEP 1: Dice Ingredients & Soak the Red Onion – Take ½ red onion and cut into thin slices. Soak in cold water and set aside. Cut and dice into even pieces ripe mangos, bell pepper, jalapeño, and chopped fresh cilantro.

STEP 2: Add diced Ingredients to a Bowl – In a medium bowl or large bowl, add diced ripe mangos, sliced red onions, red bell pepper, and jalapeño. Drizzle in ¼ cup freshly squeezed lime juice and orange juice.

STEP 3: Season Mango Salsa Ingredients – Sprinkle with garlic powder and salt. Stir and mix well to combine all the natural flavors. Taste, and adjust seasoning if needed.

STEP 4: Mix, Combine, & Rest – Allow salsa to sit at room temperature for 10-15 minutes before serving so the flavors can meld. Store in fridge for longer use. Enjoy!

  • Mango: Substitute pineapple, peaches, or nectarines for a different fruity twist.
  • Jalapeño: Use a serrano pepper for more heat or omit the seeds for a milder salsa.
  • Red Onion: Sweet onion or shallots work well as a substitute.
  • Cilantro: Replace with fresh parsley if you’re not a fan of cilantro.
  • Lime Juice: Lemon juice can be used for a slightly different citrus flavor.
  • Add Avocado: Stir in diced avocado just before serving for a creamy texture.
  • Add Corn: Fresh or grilled corn adds sweetness and extra crunch.
  • Make It Heartier: Add black beans for a more filling salsa that works well in tacos and salads.

You can store any leftover mango salsa in an airtight container in the fridge for up to 3 days. Personally, I’ve found that allowing this salsa to sit over night results in an even better mixture the next day!

Yes! Mango salsa can be made up to 24 hours in advance. In fact, allowing it to chill for a few hours helps the flavors meld together. For the freshest texture, serve within 24 hours.

Fresh mango is recommended for the best texture and flavor. If using frozen mango, thaw it completely and drain any excess liquid before mixing the salsa.

This recipe has a mild kick from the jalapeño. For a milder salsa, remove the seeds and membranes or reduce the amount of jalapeño. For extra heat, leave the seeds in or add another pepper.

Freezing is not recommended. The mango, onions, and peppers will lose their crisp texture once thawed, resulting in a watery salsa.

Ingredients 

  • 2 cups fresh mangoes, diced
  • 1/2 red onion, thinly sliced
  • 1/4 red bell pepper, diced
  • 1 small jalepeño, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh lime juice

      If needed, it can typically be refrigerated for up to 3 days, though the mango may soften and the salsa may become a bit juicier as it sits. Just give it a good stir before serving.
