This Hennessy Sidecar has been one of my go-to cocktails for years when friends who love Hennessy want something different from my famous Hennessy Margarita. My secret is adding homemade Demerara syrup, which gives this classic cocktail a richer, smoother flavor. Its subtle caramel and molasses notes complement the brown sugar, vanilla, toasted almond, and fruit flavors found in Hennessy. What Is a Sidecar Drink?
A Sidecar cocktail is a classic Cognac-based drink traditionally made with Cognac, orange liqueur, and fresh lemon juice. The ingredients are shaken with ice and strained into a chilled cocktail glass or coupe. My Hennessy Sidecar recipe keeps the foundation of the classic cocktail but adds simple syrup and Demerara syrup. That extra touch of sweetness rounds out the tart lemon while giving the drink a deeper flavor that works beautifully with Hennessy.

- Hennessy Cognac – The foundation of the drink. Hennessy brings warm fruit, oak, vanilla, and toasted flavors that stand up beautifully to citrus.
- Cointreau: My preferred orange liqueur for this recipe. Cointreau has an intensely orange flavor with both sweet and bitter orange notes, giving the drink brightness without making it overly sweet.
- Fresh lemon juice: Provides the tart, fresh citrus flavor needed to balance the Cognac and syrups. Freshly squeezed lemon juice makes a noticeable difference here.
- Simple syrup: Adds clean sweetness and helps soften the acidity of the fresh lemon juice.
- Demerara syrup: This is my secret ingredient! Its deeper caramel and molasses-like flavor adds richness and complements the warm brown sugar, vanilla, and toasted notes in Hennessy.
- Sugar: Optional, but I love using it to create a half sugared rim. You get to choose between a sweet sip and an unrimmed sip with every turn of the glass.
- Lemon twist: Adds a fresh citrus aroma and an elegant finishing touch. In my opinion, the twist makes it official!

How to Make a Hennessy Sidecar – Single Serve
Making a single Sidecar Hennessy cocktail only takes a few minutes. Below you will find step-by-step instructions with photos. Additional notes can be found it the recipe card below.

STEP 1: Prepare the glass – If desired, run a lemon wedge around half the rim of a chilled coupe glass. Optionally you can also dip it into sugar. Set aside and pull out your cocktail shaker.

STEP 2: Add the ingredients – Fill a cocktail shaker with ice. Add Hennessy Cognac, Cointreau, fresh lemon juice, simple syrup, and Demerara syrup.

STEP 3: Shake – Shake vigorously for 15-20 seconds, or until the outside of the cocktail shaker is very cold.

STEP 4: Strain and serve – Strain into the prepared coupe glass. Garnish with a lemon twist and serve immediately. Enjoy!
How to Make a Pitcher of Hennessy Sidecars
Want to make a larger batch of this for a crowd? Instead of shaking each cocktail from scratch, you can easily scale this sidecar recipe into a 60-ounce pitcher (close to ½ gallon) while keeping the same proportions and flavor as the original cocktail. The measurements below will make around 15 servings.
Measurements for a 60-Ounce Pitcher
- 30 oz (3¾ cups) Hennessy Cognac
- 7½ oz (¾ cup + 3 tablespoons) Cointreau
- 7½ oz (¾ cup + 3 tablespoons) fresh lemon juice
- 7½ oz (¾ cup + 3 tablespoons) simple syrup
- 7½ oz (¾ cup + 3 tablespoons) Demerara syrup
Combine all of the ingredients in a large pitcher and stir well. Cover and refrigerate until you’re ready to serve. To serve, pour 4 ounces of the prepared Sidecar mixture into a cocktail shaker filled with ice. Shake vigorously for 15–20 seconds, then strain into a chilled coupe glass with an optional sugared rim. Garnish with a lemon twist and serve immediately.
Hennessy Sidecar Variations
- Try Hennessy V.S.O.P – For a richer, more complex Sidecar, swap Hennessy V.S. for V.S.O.P.
- Use Grand Marnier – Replace Cointreau with Grand Marnier for a richer orange flavor and a more Cognac-forward cocktail.
- Make it less sweet – Reduce either the simple syrup or Demerara syrup slightly to suit your taste while keeping some Demerara syrup for its signature caramel-like flavor.
- Add an orange twist – Swap the lemon twist for an orange twist to emphasize the orange liqueur.
- Skip the sugar rim – Serve it without the sugared rim for a slightly drier-tasting cocktail.

Tips for Making the Best Hennessy Sidecar
- Use Fresh Lemon Juice – Do not use bottled lemon juice in this recipe! 🙂 Bottled lemon juice won’t give you the same fresh, bright flavor. Since there are so few Sidecar cocktail ingredients, the quality of every ingredient makes a difference.
- Don’t Skip the Demerara Syrup – This is the secret that separates my recipe from a more traditional classic Sidecar recipe. Demerara syrup brings deeper caramel-like sweetness that works especially well with Hennessy’s warm flavors.
- Shake It Well – Give your cocktail a full 15–20 second shake with plenty of ice. Shaking doesn’t just chill the drink, it also adds the dilution needed to bring the Cognac, citrus, and sweetness into balance.
- Chill Your Glass – A Sidecar is served without ice, so starting with a cold coupe glass helps the cocktail stay chilled longer.
- Express the Lemon Twist – Before adding your garnish, gently twist the lemon peel over the surface of the drink. This releases the citrus oils over the cocktail and gives you a beautiful burst of lemon aroma before your first sip.
Storage & Make-Ahead
This Hennessy Sidecar cocktail is best enjoyed immediately after shaking, but you can do some of the prep ahead of time:
- Demerara syrup: Make your homemade Demerara syrup in advance and keep it refrigerated in an airtight container.
- Fresh lemon juice: For the brightest flavor, squeeze the lemon juice the same day you’re serving the cocktails.
- Batching: Combine the Cognac, Cointreau, simple syrup, and Demerara syrup ahead of time and refrigerate. Add the fresh lemon juice closer to serving for the freshest flavor.
- Leftover batched cocktails: Keep the mixture (without ice) covered and refrigerated and use within 1-2 days. The drink is safe to keep longer depending on your ingredients, but the fresh citrus flavor is at its best early on.

- Fresh lemon juice: Use freshly squeezed lemon juice for the brightest, freshest flavor.
- Demerara syrup: I highly recommend using homemade Demerara syrup. Its rich caramel and molasses-like notes are one of the things that makes this Hennessy Sidecar unique.
- Adjusting sweetness: For a less-sweet cocktail, slightly reduce the simple syrup while keeping the Demerara syrup for its signature flavor.
- Sugar rim: The sugared rim is optional. I prefer rimming only half of the coupe so you can enjoy the cocktail both with and without the additional sweetness.
- Chill the glass: Place your coupe in the freezer for about 10–15 minutes before making the cocktail to help keep your Sidecar cold longer.
- Pitcher option: To make a 60-ounce batch, combine 30 oz Hennessy with 7½ oz each Cointreau, fresh lemon juice, simple syrup, and Demerara syrup. This makes 15 cocktails before shaking with ice.
